3 honey inspired recipes to celebrate World Honey Bee Day!
On the 15th August beekeepers and bee enthusiasts celebrate World Honey Bee Day. Honey bees provide us with heavenly golden honey. When returning to their hive honey bees perform what is known as a ‘waggle dance’, to point other bees in the direction of the food source. So, to celebrate World Honey Bee Day we have 3 honey recipes that will make you want to get up and dance too!

Honey, Roasted Pecan, Fig & Goat’s Cheese Salad
Use a runny honey for this easy, versatile dressing. The sweet and tangy taste of the dressing pairs, it can be drizzled over any salad. It works particularly well with goats cheese or even chicken. This salad will definitely add a wow factor to alfresco dining this summer. Choose a peppery leaf salad to accompany it such as rocket and mustard leaves.
Honey, Roasted Pecan, Fig & Goat’s Cheese Salad
Ingredients
- 2 tsp Honey
- 1/2 cup Chopped Pecans
- 125 g Goat's Cheese
- 1/3 cup Olive OIl
- 2 tbsp Balsamic Vinegar
- 1/2 tsp Salt
- 1/2 tsp Pepper
- 6 Figs (Washed)
- Salad leaves of your choice
Instructions

Preheat the oven to 180C, scatter pecans on an oven tray and drizzle with 2 teaspoons of honey; cook for 20 minutes and transfer to a waxed paper-lined baking sheet to cool.

For dressing, in a small bowl, whisk 1/3 cup oil, vinegar, remaining honey, salt and pepper; set aside.

Divide salad greens as you wish. Top with slices of goats cheese & drizzle with dressing and sprinkle with honey pecans.
Honey Roasted Butternut Squash Soup
This simple soup packed full of healthy ingredients will keep you inspired heading into the autumn months. Serve with delicious warmed bread /croutons or top off with a drizzle of cream.
Honey Roasted Butternut Squash Soup
Ingredients
- 2 Whole Butternut Squash
- 2 tbsp Olive Oil
- 3 tbsp Honey
- 2 tsp Black Pepper
- 3 Leeks finely chopped
- 1 Onion finely chopped
- 4 Carrots finely chopped
- 3 Celery finely chopped
- 3 Garlic cloves
- 2 Bay leaves
- 1.5 litres Vegetable Stock
Instructions

Slice the butternut squash in half, drizzle in olive oil and honey then season as you wish with salt and pepper.

Place them cut-side down on an oven tray, add a splash of water to the pan and cover with foil.

Roast the butternut for an hour or until they’re fork-tender.

Soften the onion, leeks, carrot and celery in a few tablespoons of olive oil in a large pot. Add the garlic and herbs then add the roasted butternut squash and vegetable stock.

Reduce heat and allow to simmer for 20-30 minutes. Then blend the soup until smooth.

Then ready to serve, bring the soup to a simmer for 5 minutes.
Honey Drizzled Flapjack
Adapt your favourite flapjack recipe with a delicious drizzling of honey! Its fruitiness and delicate floral sweetness will certainly make an amazing addition to this classic flapjack recipe.
Honey Drizzled Flapjacks
Ingredients
- 200 g Unsalted butter
- 200 g Caster sugar
- 200 g Honey
- 400 g Porridge oats
Instructions

Put the butter, sugar, and honey in a saucepan and heat, stirring occasionally, until the butter has melted and the sugar has dissolved.

Add the oats and mix well.

Preheat the oven to 180C and grease a 20x30cm baking tray. Transfer the oat mixture to the tray and spread.

Bake in the oven for 15–20 minutes, until lightly golden around the edges, but still slightly soft in the middle.

Leave to cool in the tin, then turn out and cut into squares.

Drizzle with honey for that final bee-utiful touch.
