Honey, Roasted Pecan, Fig & Goat’s Cheese Salad

Ingredients

  • 2 tsp Honey
  • 1/2 cup Chopped Pecans
  • 125 g Goat's Cheese
  • 1/3 cup Olive OIl
  • 2 tbsp Balsamic Vinegar
  • 1/2 tsp Salt
  • 1/2 tsp Pepper
  • 6 Figs (Washed)
  • Salad leaves of your choice

Instructions

  • Preheat the oven to 180C, scatter pecans on an oven tray and drizzle with 2 teaspoons of honey; cook for 20 minutes and transfer to a waxed paper-lined baking sheet to cool.
  • For dressing, in a small bowl, whisk 1/3 cup oil, vinegar, remaining honey, salt and pepper; set aside.
  • Divide salad greens as you wish. Top with slices of goats cheese & drizzle with dressing and sprinkle with honey pecans.
